Simple Avocado Mango Salad Recipe | Restricted Kitchen

Refresh and relax with a sweet and simple twist on your average side salad!

Summer is here and in full swing. In fact, it will be gone before you know it. Pretty soon, we’ll be shuffling through the cold in our winter parkas, down the windy streets of Chicago.

Until then, you must take advantage of the glorious weather. And the fresh palette that comes with it. Iced tea. Backyard BBQ. Summery salad.

Rather than opt for a head of iceberg and bottle of ranch, you can mix things up with a fruity, juicy dish that pops! This week, we got to use both our ripe mangoes and just-in-time avocados. (Does anyone know how to keep avocados from going bad? I’m all ears.) And made this delicious Avocado Mango Salad!

Mangos will put you in the island spirit faster than anything else. Plus, avocados are SUPER food packed with vitamins, minerals and antioxidants.

Here’s one to get you started. Get ready to get your summer flavors flowing!
This salad is drizzled with a tangy lime vinaigrette and fresh herbs. And, it only takes minutes to chop up and serve.

Simple Avocado Mango Salad
Serves 4

2 mangos, peeled and diced
2 avocados, pitted and diced
1/4 large red onion, diced
1/4 cup feta cheese

Tangy Lime Vinaigrette:

1/4 cup fresh basil
1/4 cup fresh cilantro
1/2 lime
1/4 teaspoon lime zest
2 tbsp olive oil
1 tbsp honey
2 tbsp balsamic vinegar
1/2 tsp red pepper flakes
1/2 tsp salt
1/2 tsp pepper

Mix it up!

Step One: In a small bowl, combine all the ingredients for the vinaigrette. Mix until well combined. Adjust seasonings to taste!

Dice it up!

Step Two: Prepare the mangos, avocados and onions. Dice into equally sized pieces. Combine with feta cheese in a large bowl.


Step Three: Drizzle the vinaigrette over your salad, and gently toss to avoid mashing your avocados. Use your hands, or a flat wooden spoon! Serve chilled.
