On a busy weeknight without much time to prep dinner, we often turn to spaghetti. Boiling a pot of water and waiting is about as easy as it gets. Open a jar of sauce and you’re happily slurping noodles in 20 minutes.

So, we decided to level-up even our laziest night of cooking with the minimal amount of effort. Our solution? Crazy delicious meatballs.
You might remember your mom’s fat, delicious meatballs sitting atop your pile of spaghetti. Or picture Lady and the Tramp on a romantic summer evening. Unfortunately, we’ve both had our fair share of small, flavorless, dense gluten free versions of this iconic dish. So, we were determined to make these as hearty, juicy and flavorful as the real thing.
This recipe only added a few minutes of cooking to our usual spaghetti night. It required very little preparation, and just a handful of ingredients we always have on hand.
Minimum effort, maximum flavor.
Best of all- these gluten free meatballs have the added perk of being low in fat. We simply traded the usual beef for ground turkey. (Truly, you can’t taste the difference.)
Gluten free. Low fat. And we were moaning in delight with every bite.
So stop settling for your boring spaghetti night and pop these in the oven while your water boils. You won’t regret this simple way to make a lazy meal delectable.
Easy Gluten Free Meatballs
1 lbs ground turkey
1/2 cup gluten free panko bread crumbs
1/4 cup parmesan cheese
1 tsp salt
1 tsp pepper
2 tsp garlic salt
2 tsp onion powder
2 tsp red pepper flakes
3 tbsp Italian seasoning
Heat it up!
Step One: Preheat your oven to 375 degrees. Prepare a baking sheet by lining with parchment paper. (Or spray down some tin foil with cooking spray)
Mix it up!
Step Two: Just put everything in a bowl. That’s it. Mix all the ingredients with your hands until well combined.
Step 3: Divide the meat mixture into eight large, round balls. (Somewhere in-between a golf ball and a tennis ball in size.) Place them in two rows on baking sheet.
Step 4: Place your meatballs in the oven and cook for 15-18 minutes, until they reach an internal temperature of 165 degrees.
While the meatballs do their thing in the oven, boil the water for your pasta! By the time it’s cooked, your quick and easy Italian feast will be ready to devour. Sprinkle with as much parmesan cheese as you desire!
